1) What is gluten and what’s so special about gluten-free?

Gluten is the protein found in wheat, barley, triticale, and rye. It’s what holds all the ingredients together and gives the perfect crumb to cakes and cookies, and also produces the chewy texture and crisp crust in bread. Many people cannot digest gluten. Some, if they eat so much as a cookie baked with wheat flour, experience symptoms of discomfort. Others suffer truly agonizing pain. And there is also a growing number of people who don’t experience any symptoms, per se, but feel immeasurably better if they don’t eat foods with gluten in them. Gluten-free (GF) bakery items make it possible for these people to enjoy the foods that are so much a part of our everyday life. That’s what makes gluten-free so special.

 

2) Why would I eat your products if I don’t need to eat gluten-free foods? 

Because they are incredibly delicious. I created them not just as desserts for those people who couldn’t otherwise eat them, but desserts that were so sensational in taste that their wheat-eating friends would not want to be left out!

Gluten-Free Perfection for everyone was my light at the end of the tunnel. I didn’t want to bring another gluten-free product into the world if it was not extraordinary.  If I couldn’t turn the highest quality ingredients into a fantastic gourmet dessert, if the “gluten-freeness” was detectable, then I would hang up my apron and measuring cups and move on. Judging by the letters from our gluten-eating tasters (see our Virtula™ Stories section), we are living up to that promise.

 

3) What kind of flour do you use?

Virtula sweets are made with a variety of gluten-free flours – brown rice flour, sweet rice flour, tapioca flour, potato starch flour. Each recipe has a unique combination of two of more of these flours.

 

4) What if I have a wheat allergy or intolerance, but not a gluten sensitivity?

We never use any wheat-based flours. All our products are gluten-free and wheat-free.  

 

5) Do you bake in a dedicated gluten-free facility?

Currently, we do not bake in a dedicated gluten-free kitchen. We understand this is a huge concern for those with celiac disease and severe wheat or gluten allergies and sensitivities, and hope to have our own dedicated facility in the near future.

 

6) Do your products contain other allergens?

All our confections are baked with butter and some with eggs to achieve their rich texture and taste. We do not bake with peanuts, tree nuts, corn, or soy. We do, however, currently share a facility where other bakers use these ingredients. We also use xanthan gum in some of our products, which may be an issue for some corn-sensitive people.

 

7) Do your products contain preservatives, additives, artificial flavors or coloring?

We do not bake with anything containing artificial preservatives, artificial flavors or artificial coloring. We don’t use anything we can’t pronounce. 

 

8) Do your bakery goods contain trans fats?

We use only real butter and never use partially hydrogenated fats.

 

9) When are Virtulas best to eat?

As soon as you get them! And of course you can eat them for a snack, after yoga, while hiking, when watching a great movie, while ice skating or whale watching, and of course for dessert.

Some people enjoy them frozen. Some prefer them warmed, and others, somewhat molten. Some sprinkle powdered sugar on the Velvets, while others top them with whipped cream. And while most people eat Virtulas for desserts or snacks, some people eat them for breakfast. 

 

10) How do I store the Virtulas I managed not to eat all in one sitting?

If you can resist eating them all at once, place the “leftovers” in an airtight freezer bag in the freezer (NOT the refrigerator as this will dry them out) to maintain freshness for up to 6 weeks.  We recommend that you store each kind of cookie in its own bag or they will “borrow” flavors from each other. Also, if you store soft and crisp Virtulas in the same bag, the crisp ones will rob moisture from the soft ones, causing the crisp ones to become soft. 

 

11) How do I defrost my Virtulas?

We recommend that you take them out of the freezer bag and place them on a plate where they can breathe for one hour. Then enjoy. 

 

12) Are all Virtulas packed in the pretty brown box with a satin bow?

Absolutely! Unless of course you're ordering party favors, in which case the confections will be packed in a cellophane bag with a ribbon and tag. 

 

13) How far in advance do I need to place my order?

Most orders can be placed online. If you place your order by Thursday 1pm PST (Pacific Standard Time), it will be shipped the following Tuesday. For large orders, please call or email us at least 2-3 weeks in advance so we can arrange our baking schedule accordingly. 

 

14) Can Virtula Bakery assist in business gift giving and large orders?

Most definitely. Depending on the size of the order, we'll need about 2-3 weeks advance notice. Simply give us a call at (323) 919-5739 to discuss the size of the order and when you'd like it to be shipped or delivered. We'll try to do everything possible to accommodate your dates. 

 

15) Can I include a personal note with my box order?

Of course. On the Checkout page you'll have the opportunity to write a brief note in the space labeled "Gift Card Message." If you are shipping to multiple addresses and would like to include a gift card with each box, please indicate which note goes with each recipient. 

 

16) Is it possible to ship to multiple shipping addresses in one transaction?

Yes, but in order to do so you'll be asked to register an account with us. This is just the nature of how our system is designed to allow you to assign the appropriate address to each of the boxes. Note: when checking out with multiple addresses the shipping cost will be calculated according to each separate address you designate, and will not match the "Estimate Shipping" cost calculated on the Cart page. The "Estimate Shipping" button calculates all boxes assuming they would be shipped to one address.

 

17) What forms of payments do you accept?

We accept MasterCard, Visa, American Express, Discover, Diners Club, and JBC. At this time we don't take ACH transactions.  

 

18) Is there sales tax?

There is no sales tax applied to the desserts we make. 

 

19) I placed an order, but need to cancel it. What is your cancellation policy?

We have a 24-hour cancellation policy from the time you place the order. During that time your card will not be charged. If you need to cancel please call us during that 24- hour period and there will be no charge to you.

21) Is my personal information secure while shopping on your website?

Our website is PCI compliant. You can shop with confidence at Virtula Bakery, knowing your purchases and personal information are protected by SSL encryption, the highest level of security. We never see or capture your credit card information. All other personal information (name and email) is never shared with third parties and remains confidential. 

When you place an order, the processing center obtains your credit card data (we never see it) but does not process it for 24 hours (see our 24-hour cancellation policy). Although it may appear in your online credit card activity, this is actually a “hold,” and the charge is not final until the end of 24 hours.
